Low Gap Whiskey
Small cognac stills are superb pieces of equipment, and Crispin Cain is a master at extracting soft, clean, rich, pure, and wondrously flavorful. The review in Malt Advocate that awarded “Artisan Distiller of the year” said, essentially, “we can’t believe we are awarding this to a clear whiskey.” These whiskies are amazingly soft and rich, with beautiful finishes.
Our locally made Bourbon has received much acclaim from California to Bourbon Country. It has won the Fifty Best Bourbon competition's top spot 2 years in a row! The mash bill is corn, barley, and rye; aged in selected new bourbon barrels. Aged in 100% new American white oak barrels, charred
Double distilled using the Charentais Method
NOSE - Buttery, malt, oak, vanilla
PALATE - Buttery corn, malt, oak, chocolate, earth, citrus
Malted corn and barley. These whiskies were originally stored in new Bourbon barrels for 18 months, at that time Crispin blended the whiskies and re-barreled in used Cognac barrels for another 18 months. The result is simply wonderful. The mash was slowly fermented to dryness with Champagne yeast in both whiskies. Slow distillation, the cuts were done by hand. The old Cognac still we use creates smooth, complex whiskies.
NOSE - Oak, grains, malt, baked goods
PALATE - Caramel, butterscotch, sunshine
A blend of 4 and 5 year old whiskies from 2010 and 2011. The flavor is dense and complex. 45.5%Crispin Cain began making whiskey with a malt extract of Bavarian wheat back in 2010. a fine example of what can be done with traditional methods and Cognac pot stills.
NOSE - Malt, toasted wheat, crackers, chocolate
PALATE - Toasted cracker right up front, malt, toffee, tobacco, butter
Rich and indulgent, this whiskey is very fine in cocktails or on the rocks.
From malted Bavarian hard wheat on the Germain-Robin 16HL antique cognac still. Aged 2+ years in a special selection of three new and used American oak barrels. 50% abv.
Very smooth, very rich. Full rye body. 100% rye malt extract. Fabulous. Aged 2 + years in new and used bourbon, used cognac barrels and new small cooperage barrels from Minnesota. 42.2% abv.

Craft method Cocktails methodolically blended & then put back to age in oak for 6 weeks. The ingredients in these ready-to- drink beauties are craft-method spirits: brandy from Germain-Robin, Low Gap whiskey, liqueur from Clear Creek, vermouth from Quady, all frequently reviewed as among the finest in the world.
When you get a cocktail at a bar, the ingredients have not had the time to come together. Six weeks in barrel after mixing makes an incredible difference.
Russell Henry London Dry gin with a whisper of Vya Extra Dry vermouth. This is one of the best drinks on the planet: subtle, crisp, smooth to the point of unreality. 1L is eleven 3-oz. drinks.

Our Lady of Bourbon is the Spirit of California. Her notes and subtleties are gently coaxed out and presented to the palate as a rare and clean whiskey meant t0 savor. Aged 3 years in new charred bourbon barrels, the mash consists of malted Corn, malted rye & malted Barley.
NOSE - Butterscotch, marzipan, candied pecans, dried apple
PALATE - Sweet cream butter, cocoa, rose, cloves and dark rum
FINISH - Soft & smooth with hints of vanilla, toffee and toasted grains
Made from medium toasted malted rye, this 2012 distillation is flawless. Distilled in old Cognac pot stills and aged in American oak, this whiskey is as adventurous as its name sake. Rated top 10 of American Rye Whiskies and awarded 95 points at the Ultimate Spirits Challenge

PALATE - Spice, rancio, oak, malted grains, dark chocolate
FINISH - Lingers long with dark chocolate, oak & caramel
Our Aged Gin is intensely earthy and spicy. It is a perfect blend of juniper berries, coriander, cardamom, lemon peel, orange peel, grains of paradise, licorice root, orris root, rosemary and cinnamon sticks. The Gin is a proprietary blend of 80% GMO-free corn from Quebec and 20% organic wheat from Italy.
NOSE - Oak, cardamom, coriander, juniper, citrus & vanilla
PALATE - Earth, black tea, cinnamon, cardamom, juniper
FINISH - Warm crisp finish of cinnamon & cardamom
NOSE - The fragrance is fresh and clean, like a squeeze of citrus and spice in a pine forest.
PALATE - On the palate you will find bright bursts of orange zest and pine over a dash of white pepper and lemon custard.
FINISH - The finish is clean and smooth with a lasting freshness.
