       Tamar Distillery

Tamar Distillery Inc./ Mendocino Spirits was founded in 2008, where we make Low Gap Whiskey, Russell Henry Gins, Fluid Dynamics Cocktails, and DSP 162 Vodkas. We use ancient methods learned during a lengthy apprenticeship with a brandy master from Cognac. Crispin applies the old double distillation method used in Cognac for over 500 years to make Low Gap Whiskey, and all our products. This allows him to select only the heart of the spirit to save for aging, blending, and drinking, lending a particularly high quality to the finished products.


Crispin Cain, President

Crispin Cain is the president and co-founder of Greenway Distillers, Inc., Tamar Distillery, Inc./ Mendocino Spirits. As senior distiller Crispin oversees all aspects of production of Low Gap Whiskey, Russell Henry Gin and many other fine spirits. Crispin has been working in wine and spirits since 1983. He moved to Mendocino County in 1985 to get more involved in winemaking. In 1989, Crispin went to work for the brandy master, Hubert Germain-Robin, as the assistant distiller. Crispin Cain and Tamar Kaye have been collaborating since 1992, they have been in the spirits business together since 2005.



Tamar Kaye V.P.

Tamar Kaye is a Native of Mendocino County, California. She has pursued a life of Gardening and Art. She has been gardening since she was a child. Horticultural studies started at a hands-on Job at Emandal Family camp & Farms in 1991. She then was influenced by the Biodynamic French intensive method while working at Wildfree, 1992-1993.

She has been a professional gardener since 1994, having worked privately for years then moved to a 55 acre retreat owned by a non-profit organization with an acre garden/orchard to care for, 1996-2008.


Today, Tamar is Vice President and Director Marketing for the many brands that have been developed.  She has been Crispin's apprentice since 1994.  Tamar and Crispin incorporated Greenway Distillers Inc. in 2005 and Tamar Distillery Inc. in 2009. She has a beautifully trained palate and a wonderful talent for creating the finest of yummy things, from Rose Liqueur to Whiskey, and is essential in the creation of our Spirit expressions. She also maintains the Rose farm for Greenway Distillers, Inc., which has 160 roses.

An amazing and  dynamic duo! 

Hoolis is head Bartender at The Sign of the Whale in Point Arena, and we are very proud to have him as our Mixologist for cocktail research and development and brand ambassador. 
We are also grateful to have Caitlin Riehl as our Chief of Operations. She has a Bachelors in Business Management and Accounting and has been involved in business on the coast for decades. She is happy to now be able to loan her knowledge to Tamar Distillery, Inc.
Caitlin and Hoolis have been Mendocino residents for over 20 years, have raised their two children here and are excited to be a part of this amazing company.

Crispin Dylan Cain


The Eldest son of our Master Distiller Crispin Cain. Crispin has always had a keen mind for details and he is a marvelous apprentice in the Distillery!
